If you ‘re looking for a healthy dessert and love pistachios, then you, my friend, are in for a treat!
This is a super simple dessert that has the smooth, creamy, pistachio-y deliciousness that you’ve always loved about this beloved green pudding, but it’s made with a secret ingredient: avocados.
Avocados are loaded with healthy fats that will have your skin and hair looking lustrous and healthy, plus with no refined sugar this recipe is perfect if you’re looking for another sweet treat to add to your repertoire that doesn’t have you feeling guilty or like you need to take a nap after you indulge.
Plus, there’s those little green buggers that give this recipe its goodness: pistachios! Did you know that pistachios have the fewest calories, lowest fat, and highest protein compared to walnuts, almonds, cashews and most other nuts? Uh-huh. That’s right.
Plus they’re an excellent source of copper, manganese, thiamine, phosphorus and Vitamin B6 (well la-ti-doo pistachios, wouldja look at you!) I know that you’re thinking – manganese – WOO HOO! Love that stuff (jk) But seriously you should get psyched.
Here’s why: Manganese is a required co-factor for an enzyme called prolidase, which is in turn necessary to make collagen as a structural component of skin. Bottom line – this s#*@ is great for achieving that youthful, healthy glow that we all want.
In addition to its collagen production role, manganese also functions as an antioxidant in skins cells and other cell types. It helps protect skin against oxygen-related damage and also against damage from ultraviolet (UV) light. Combine that with the detoxifying lemon, healthy fats from avocado and you are pretty much eating a bowl of beauty pudding. How awesome is that?!
Ok, so here’s how to make it:
Ingredients:
2 ripe avocados
1/2 cup raw, unsalted pistachios (plus more for garnish)
1/4 cup pure maple syrup
3/4 cup coconut water
1/8 teaspoon of high quality sea salt (or regular in a pinch)
2 tsp vanilla extract
1 tsp almond extract
Squeeze of fresh lemon
Handful of fresh baby spinach (for a beautiful hint of green sans food coloring!)
Optional: shredded coconut for garnish
Directions:
Soak 1/2 cup of the pistachios for 10-15 minutes in warm water. Place all ingredients except lemon in a high speed blender and blend until smooth. Squeeze in lemon to taste and blend again. Serve in small bowls with some extra pistachios, coconut and salt on top for garnish. Serves 4.
