I was talking to my friend Becky the other day about an idea I had for creating some new tools and trainings for you (meal planners, shopping lists, etc) and asked her for some feedback.
She got real with me.
“Honestly, Krissy, I feel like I’ve seen all that before. I get what I should be eating and cooking, but what I REALLY want to see is how you deal with those moments when you suddenly realize you are STARVING, have no time (or energy) to cook, and have to whip something up in 5 minutes with whatever’s in the fridge.”
Genius, right?
Gotta love a good girlfriend who gives it to you straight.
I felt like this was perfect because (full disclosure) I make most of my meals in 10 minutes or less. No joke.
Of course I love a leisurely fall day where I can turn on the oven and pull out the cookbooks and create a masterpiece, but most days (especially in the summer) I am in and out and off to the next adventure.
Over the years I’ve mastered how to make a quick meal that is balanced, filling, and (most importantly) delicious!

I think you’re pretty damn awesome Krissy Ruddy! Thank you for your blog. Thought I would share one of my go to meals- TACO SALAD. Any form you’re craving whether hot or cold, saucy or fresh. Any ingredients are delicious, my favorite is a combination of just washed from the garden and the leftovers from 2 nights ago. The cast iron pan is the only dirty dish, and can be your beautiful colorful plate too:)
My favorite:
Onion, garlic, shallot or anything of the like sauteed up, add local ground beef (done in 5 min on med high) and season if you desire, add any other veg that you want to warm. Top with salad greens, raw veg, cilantro, fresh salsa, avocado, sour cream….whatever is in the fridge. Great as is, with warmed corn tortillas, taco shells or chips. 10 minute meal for you, or the whole family!
