I just tried this variation off a recipe from Kris Carr’s Crazy, Sexy Kitchen. I whipped it up in about 5-10 minutes. You’ll love it if you are in the mood for something quick, fresh, hearty and satisfying.
Ingredients:
For salad:
- 1/2 a bunch of lacinato kale
- 1-2 medium carrots
- 1/2 a zucchini
- 1/4 cup raisins
- fresh herbs (optional)
- Raw pumpkin and flax seeds.
For dressing:
- 1/4 cup almond butter
- 1/4 cup chopped dates
- 1 clove garlic
- 1/2 teaspoon lemon juice
- 1/3 purified water
- 1/2-1 full teaspoon cardamom
- 1/4 teaspoon black pepper
- rock salt to taste
Directions:
Thinly chop kale and shred carrots and zucchini (it’s best to use a food processor with the slice blade for kale, then the grate blade for the carrot and zucchini). Toss in a bowl with raisins and herbs. In a food processor or high speed blender add the dressing ingredients (except water) and combine. Slowly add the water until smooth. Toss the dressing with the salad and sprinkle seeds on top.
