It all started with my girl Sarah B posting this ridiculously gorgeous recipe on Facebook and all of a sudden it dawned on me that my pistachio pudding recipe might just make for the perfect creamy, melt-in-your-mouth sweet, cold popsicle treat!
So…
I immediately got on Amazon and ordered these popsicle molds (Amazon Prime, how you enable my culinary impulses so…). And when they arrived on my door I literally jumped up and down I was SO excited!!
Popsicles people. They aren’t just for kids anymore!
These sweet and creamy, and oh-so-pretty green beauties are made with just a few simple ingredients, so pure and good-for-you that you’ll have no qualms about indulging in one… or two 😉 (no judgement my friends).
And as Sarah B. taught me, superfoods and a drizzle of dark chocolate make the perfect topping to any frozen DIY popsicle treat! So feel free to get creative with the recipe and create your own rendition as well!
I went with hemp seeds, bee pollen, pistachio dust and rose petals. Because, I mean come on. How good does that sound?!

Ready? Here we go!
Here’s what you’ll need:
2 ripe avocados
1/2 cup raw, unsalted pistachios (plus more for garnish)
1/4 cup pure maple syrup
3/4-1 cup coconut milk (use canned coconut milk for a richer popsicle, or homemade for a lighter version, add more to thin it out if needed to get into the molds)
1/8 teaspoon of high quality sea salt (or regular in a pinch)
2 tsp vanilla extract
1 tsp almond extract
Squeeze of fresh lemon
Handful of fresh baby spinach (for a beautiful hint of green sans food coloring!)
Optional Toppings:
Drizzle of dark chocolate
Shredded coconut
Rose Petals
Bee Pollen
Pistachio “Dust” (chop the pistachios SUPER fine)
Hemp Seeds
Freeze-dried fruit, smashed up
DIRECTIONS:
Soak the 1/2 cup of the pistachios for 10-15 minutes in warm water. Place all ingredients except lemon in a high speed blender and blend until smooth. Squeeze in lemon to taste and blend again. Adjust sweetness and add more coconut milk until you reach your desired consistency. Pour into popsicle trays and tap the mold on the counter several times to release any air bubbles. Freeze for 4-6 hours or overnight if needed. Makes approximately 10 popsicles.
