I just made this for Ry and I as part of lunch today and we both absolutely loved it so I wanted to share it with you! It’s a quick snack or salad addition that can be popped in the oven as you go about the other things on your to-do list. (Tip: this would be delicious in the Woodland Goddess Salad!).
Ingredients:
Approx. 3 cups chopped broccoli
2 cloves of garlic, minced
Drizzle of olive oil (about 1/2 Tablespoon)
salt and pepper
How to do it:
Preheat oven to 400 degrees. Put all ingredients together on a baking sheet, toss well using your pretty clean hands. Put on top rack of oven and roast for 15-20 minutes (or until slightly browned) turning once about 1/2 way through.

I’m in love with roasted anything that has oil and garlic on it. Will have to try this out next time the weather cools down!
Totally agreed. My fav lately besides the broccoli is thin sliced zucchini. And yes, it does warm up the house, so probably best for cooler days. Luckily in Vermont I have a lot of those 😉 Thanks for your comment!
