Let’s just make a collective pact right now, ok?
Repeat after me: I will no longer eat heavy, carb-y, crappy things for breakfast (I’m looking at you bagels).
Sound good? Alright, great. Now let’s make it happen!
You’ve heard that breakfast is the most important meal of the day, and I’m sure you’ve considered how great it would be to prepare yourself a beautiful breakfast in a sunny, clean kitchen, sipping tea and leaning back in your cozy bathrobe as you watch the sun come up over the skyline.
You might imagine that if you just had more time you could treat yourself better, enjoy your morning, and eat something that made you feel light, energized and ready to start your day.
The only problem is (for most of us) mornings seem to take on a frenzied pace that resembles more of an evacuation than a laid-back vacation, and we start to believe that eating in the car, at a desk, or on the run is just the way “it has to be” until… “I get a less demanding job, or my schedule changes, or I don’t have this damn commute, or I don’t need to take care of everyone else and can finally focus on me.”
I ask you to challenge this belief and cozy up to the possibility that you can have it all – starting right now.
From my experience life doesn’t get easier, less busy, or less challenging. However I believe with all my heart that if we prioritize our health and treating ourselves well, we end up having the energy to deal with all that life brings with enthusiasm, joy, and grace. Starting your day out right puts this intention into motion and sets the course for the rest of your day.

Ingredients:
2 teaspoons oil (ghee, coconut or olive oil in a pinch)
one handful of diced tomatoes (the ones in the video are yellow tomatoes from our garden)
small handful onions
1-2 cloves of garlic, minced
2 big handfuls of chopped kale (stems removed and chopped)
2 eggs, whisked with a fork (or 1/2 a package of tofu for an egg-free/vegan option)
fresh herbs (such as rosemary, basil, oregano, and thyme)
salt and pepper to taste
optional: 1 ounce of goat cheese (I used herbed goat cheese)
Directions:
Chop ingredients. Heat oil, onions, kale stems and garlic in small frying pan on medium heat. When onions soften, add tomatoes, salt, pepper and herbs, stir. Add kale and stir until it starts to wilt. Beat eggs (or crumble tofu) and pour into pan, cover and cook for 2 minutes. Then give it all a stir, add goat cheese and cover again until eggs are cooked through. Serve with a few more herbs sprinkled on top and a nice piece of toast.
