Oh yes, oh yes, oh yes!! Thank the heavens that this happened.

I’ve been creating  a 21-day cleanse program that I am testing out before I release it (keep an eye out!) and it has been really fun so far. I’m feeling light, energized, and, most importantly, well nourished. But today I had a sweet hankering and needed to create a fix from what was in the fridge.

I had 3 requirements: 1. it was quick, 2. it was sweet and delicious, and 3. it was full of clean ingredients that would fit into my cleanse guidelines.  This what I came up with.

Pecan Pie Bites! (Yes, with an exclamation point)

Ingredients

1 cup raw pecans

1/2 cup raw almonds

3 or 4 medjool dates, pitted (make sure they are still moist, if not give ’em a soak in some warm water first)

Drizzle of maple syrup (adjust depending on how sweet you want them, I did about a 1/2 Tablespoon)

1 Tablespoon coconut oil

1 teaspoon vanilla extract

1 Tablespoon chia seeds

1/2 teaspoon rock or sea salt

some H20

Optional: 1 Tablespoon or more of cacao powder (for chocolate pecan pie!)

Directions

Put the nuts in a food processor and pulse/grind until coarse and clumpy. Then add the remaining ingredients (except water) and blend again until well combined. Add some water a little bit at a time until the mixture sticks together (I did approx 2 Tablespoons). Check out the pic below to see the desired consistency.

Then go ahead and  roll the mixture in your hands to create any sized ball of bliss that your heart desires. Also, as you can see below, these things love being dressed up all sassy in a little shredded coconut. Pop the finished product in the freezer and wait about 10-15 minutes before serving. Store them in the freezer and grab one (or two) for a sweet treat later in the week!
