Chunky Homemade Pizza Sauce

Makes enough sauce for one large pizza or two individual pizzas

Ingredients
  • 1 28 oz can diced tomatoes, drained
  • 2 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 2 tablespoon good quality olive oil
  • ¼ teaspoon salt
  • a few cranks of fresh-ground pepper
  • 1 teaspoon maple syrup
  • 1 clove fresh garlic, crushed
  • Optional: 2 tablespoons Parmesan or Romano cheese (this will of course will take away it's "dairy-free" status, but it gives it a nice flavor)
Instructions
  1. Open and drain the tomatoes and place in a medium-sized bowl (reserve the juice to freeze and save for soups and sauces). Place all ingredients into the bowl and stir. Let it sit for 10 minutes (if you have the time) to let the flavors combine. Spread over a pizza shell (try this gluten-free cauliflower crust!) and sprinkle with cheese or your favorite veggies... or both!
