The Best Kind of Muffin Top...

Serves: 8
- 1 egg
- 1 banana (medium-large, ripe to semi-ripe)
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ⅓ cup almond butter
- 1 Tbsp maple
- ½ tsp baking soda
- ½ tsp salt
- ½ cup coconut flour
- 2 Tbsp melted coconut oil
- ¼ cup chopped raw walnuts
- Preheat oven to 350F.
- In a medium bowl crack the egg and beat with a fork.
- Mash in the banana (leaving a few chunky pieces).
- Add all ingredients except coconut flour and walnuts and stir well to combine.
- Then mix in coconut flour, then the nuts.
- Drop onto baking sheet lined with parchment paper (about ⅓ cup of mix per muffin top).
- Bake for approximately 20 minutes or until golden brown and firm to the touch.
- Serve warm with a little Earth Balance or butter.
