Ingredients
  • 1 egg
  • 1 banana (medium-large, ripe to semi-ripe)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ⅓ cup almond butter
  • 1 Tbsp maple
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup coconut flour
  • 2 Tbsp melted coconut oil
  • ¼ cup chopped raw walnuts
Instructions
  1. Preheat oven to 350F.
  2. In a medium bowl crack the egg and beat with a fork.
  3. Mash in the banana (leaving a few chunky pieces).
  4. Add all ingredients except coconut flour and walnuts and stir well to combine.
  5. Then mix in coconut flour, then the nuts.
  6. Drop onto baking sheet lined with parchment paper (about ⅓ cup of mix per muffin top).
  7. Bake for approximately 20 minutes or until golden brown and firm to the touch.
  8. Serve warm with a little Earth Balance or butter.
